In the Upper Loire appellation of Reuilly, the traditional treatment yields a pale vin gris that reflects the grapes pinkish, grayish tint at ripeness. Vigneron Denis Jamain accomplishes this by letting the fruit sit for a few hours in the press during the slow, gentle pressing cycle, ensuring a wine of the
